Spanish rice is a flavourful rice which can be easily prepared with a few ingredients. It is awesome and has a unique flavour. The hint of chipotle adobado sauce gives a earthy and distinct flavor to it. This is a new dimension to my cooking and I am absolutely loving it.
Spanish rice is ideal for the lunch box. It can be made quickly. It is tasty and different.
What is Chipotle Adobado?
It is commonly used ingredient in Mexican cooking. Chipotle is smoked red jalapeno peppers. These are put in adobo sauce which contains some spices, vinegar, tomato sauce and ancho chillies. It gives a unique and tasty flavor to the dish.

Spanish Rice with Chipotle Adobado
Preparation time: 5 minutes
Cook time : 15 minutes
Total time: 20 minutes
Measurement : 1 cup =250ml
1 cup Basmati rice
1 onion finely cut
4 red tomato
3 cloves garlic cut into pieces
2 tsp cumin powder
1 tbsp Sprig Chipotle Adobado Sauce
1 tbsp oil
salt to taste
Wash and soak the rice in water for ten minutes.
Boil some water in a pan. Make an incision on the top of tomatoes and put them in water. Turn off the stove.
Once, it is cooled, peel the skin and blend it to a puree.
Take a pan. Add oil. Put in the onion and garlic into it. Saute for sometime.
Put cumin powder and saute again until the onions are translucent in colour.
Now, add tomato puree and sprig chipotle adobado sauce to it. Let the flavours infuse.
Add the soaked rice and saute for sometime.
Put salt and two cups of stock to it. Give a stir.
Close the lid and allow to cook on medium flame until it is done. It requires 10-12 minutes to be ready
Garnish with cilantro.
Spanish rice is ready to serve.
A tasty and unique dish from Mexican cuisine. It is a one pot dish which can be prepared quickly with few ingredients. The flavour of chipotle adobado sauce makes it zing and splendid.
- 1 cup basmati rice 1 cup =250ml
- 1 onion finely chopped
- 4 red tomatoes
- 3 cloves garlic cut into pieces
- 2 tsp cumin powder
- 1 tbsp chipotle adobado sauce
- 2 cups stock
- salt to taste
- 1 tbsp oil
- cilantro chopped
Wash and soak the basmati rice for ten minutes.
Make an incision on the tomatoes and put them in boiling water for sometime.
Once cooled, blend and make a puree of it.
Take oil in a pan. Heat it. Add onion and garlic pieces to it. Saute it for sometime.
Add cumin powder to it.
Saute for a minute.
Now, add tomato puree and chipotle adobodo sauce to it. Saute for two minutes.
Add the soaked rice to it. Saute for a minute.
Add salt and stock to it. Give a stir.
Close the lid and allow to cook on medium flame till done. It needs about ten to twelve minutes.
Spanish rice is ready to serve. Garnish with cilantro.
- Cook on medium flame. I keep a small bowl to stop the steam from escaping.
- You can follow other methods of cooking also. To make in pressure cooker, follow the same method, and keep the whistle over it.
- To cook in rice cooker, transfer it to the rice cooker and then add the stock.
