- 2 tablespoon oil
- 1/2 teaspoon mustard
- 1/4 teaspoon asafoetida
- 1/4 teaspoon turmeric powder
- 1/2 kilogram brinjal
- salt
- a little water
- 3 teaspoon vegetable spice mix
- 1/2 teaspoon chilli powder optional
Cut the brinjal into small pieces. Put them in water to avoid discolouration.
Take oil in a pan, add mustard seeds. As it crackles, tip in turmeric powder an asafoetida. Discard the water and put the brinjal pieces to it.
Put salt and sprinkle some water to it. Close a lid and allow it to cook. Give a stir in between.
Once the brinjal is cooked, give a stir and mash it lightly with the ladle.
Put the spice powder to it. Depending on the taste, use chilli powder.
Let cook for a minute.
Remove and serve with hot chapati or phulka. Brinjal Stir Fry is also used with hot steamed rice.
Cut the vegtable into small pieces.
Allow to cook with a lid closed over it.
