Method
- Cut the brinjal into small pieces. Put them in water to avoid discolouration.
- Take oil in a pan, add mustard seeds. As it crackles, tip in turmeric powder an asafoetida. Discard the water and put the brinjal pieces to it.
- Put salt and sprinkle some water to it. Close a lid and allow it to cook. Give a stir in between.
- Once the brinjal is cooked, give a stir and mash it lightly with the ladle.
- Put the spice powder to it. Depending on the taste, use chilli powder.
- Let cook for a minute.
- Remove and serve with hot chapati or phulka. Brinjal Stir Fry is also used with hot steamed rice.
