Method
- Put milk in a thick bottom pan and put it to boil on a low flame.
- In two tablespoon of warm milk, soak the saffron strands.
- Grind the almonds to a fine powder. Put it in the milk.
- Add sugar to it. Give a stir.
- Now, slowly add the rice flour to it. Keep stirring as lumps are easily formed.
- Once it thickens, add cardamom powder and the soaked saffron to it. Give a stir and put it aside.
- Serve it chilled.
Notes
Alternatively, soak two tablespoon of rice in water for half an hour. Grind it to a paste and put it in the milk.
Almonds may be soaked in water but I prefer to use it this way.
A mixture of cashew and almonds may be powdered and used.
Instead of cardamom powder and saffron strands, vanilla flavour may be used.
