A tasty and unique dish from Mexican cuisine. It is a one pot dish which can be prepared quickly with few ingredients. The flavour of chipotle adobado sauce makes it zing and splendid.

Ingredients
1cupbasmati rice1 cup =250ml
1onionfinely chopped
4red tomatoes
3clovesgarliccut into pieces
2tspcumin powder
1tbspchipotle adobado sauce
2cupsstock
salt to taste
1tbspoil
cilantrochopped
Instructions
Wash and soak the basmati rice for ten minutes.
Make an incision on the tomatoes and put them in boiling water for sometime.
Once cooled, blend and make a puree of it.
Take oil in a pan. Heat it. Add onion and garlic pieces to it. Saute it for sometime.
Add cumin powder to it.
Saute for a minute.
Now, add tomato puree and chipotle adobodo sauce to it. Saute for two minutes.
Add the soaked rice to it. Saute for a minute.
Add salt and stock to it. Give a stir.
Close the lid and allow to cook on medium flame till done. It needs about ten to twelve minutes.
Spanish rice is ready to serve. Garnish with cilantro.
Notes
Cook on medium flame. I keep a small bowl to stop the steam from escaping.
You can follow other methods of cooking also. To make in pressure cooker, follow the same method, and keep the whistle over it.
To cook in rice cooker, transfer it to the rice cooker and then add the stock.
