How to make tasty green chutney

Green chutney is one of the essential accompaniments with any evening snack. It is spicy, tasty and versatile in its use.

Green chutney is perfect match for sandwich. It goes well with any paratha.  It makes a perfect accompaniment   with snacks such as  samosa, cutlets, kachori etc. It is quintessential for chats as bhelpuri and sevpuri.

Various kinds of green chutney can be prepared. Here are two kinds of green chutney that I often prepare.

Use fresh coriander and mint leaves. Do not use thick stalks into the chutney. Adjust consistency of water, thin for chats, medium consistency for snacks and thick to spread for sandwich.

Ingredients:

Measurement used: 1 cup =250 ml

  • 1 cup coriander
  • 3-4 green chilly
  • salt to taste
  • 1 tablespoon lemon juice
  • water

Method:

  1. Wash the coriander leaves well by immersing in water.
  2. Later, grind with chilly and salt, add lemon juice to it and store in a container.

  • 1 cup coriander leaves
  • 1/2 cup mint leaves
  • 4-5 green chilly
  • 1 inch ginger
  • 2 cloves garlic (optional)
  • 1 tablespoon green gram
  • salt
  • water
  • lemon juice

Method:

  1. Wash the coriander and mint leaves by rinsing in a bowl of water.
  2. Grind green gram, green chilly, ginger and garlic together. Put the coriander and mint leaves into it along with salt and some water. Pulse again.
  3. Remove in a bowl and add lime juice to it.
  4. Use as desired.

Take a tip:

  • Garlic may be avoided.
  • Use green chilly as per your taste.
  • Add a little yoghurt to it and you have a ready instant dip.

Green chutney is usually served with snacks such as cutlets and kachori. It is spicy band makes the dish taste better.

Ingredients
  

  • 1 cup coriander
  • 3 green chilly
  • salt to taste
  • lemon juice
  • water

  • 1 cup coriander
  • 1/2 cup mint
  • 4 green chilly
  • 2 cloves garlic optional
  • 1 inch ginger
  • salt to taste
  • water
  • 1 tablespoon green gram

Method
 

  1. Remove the stalk of the greens. Wash them by immersing in a bowl of water.
  2. Grind with green chilly and salt along with some water. Remove in a bowl and add lime juice.
  3. For the second variety, grind green gram along with chilly, ginger and garlic. Then, add the coriander leaves, mint and salt, pulse it with some water. 
  4. Remove in a bowl and add lime juice.
