Have you ever tried making mint paratha? If not, do give a try to it. They are aromatic and refreshing. The smell of mint leaves can never be locked, it spills everywhere. No need of any accompaniment, you can serve it with curds and pickle.
Last year, I was going through Tarla Dalal vegetarian cook book and it was then I found this mint paratha. Since then, I have made it many times.

Ingredients:
- 2 cup wheat flour
- 1 cup mint leaves
- 1 teaspoon ajwain
- salt to taste
- 2 teaspoon chilli powder
- 1 teaspoon oil
- water for kneading
- wheat flour for dusting
- oil for roasting
Method:
- Separate the leaves, wash and dry them
- Chop them finely.
- In a wide bowl, mix the ingreients.
- Add little water and knead to a soft dough.
- Keep it aside for ten minutes.
- Take a ball of the dough.
- Roll into a circle of 4 inch diameter.
- Smear a little oil and dab some flour.
- Fold it into pleats, from one end to the other.
- Now, enclose it into circular shape.
- Dust it with some flour and roll it.
- Heat a skillet, put the rolled paratha on it.
- After a few seconds, flip it and apply oil
- Turn it to the other side and smear oil. It should be well roasted.
- Serve with curds or pickle.

Ingredients
Method
- Separate the mint leaves, wash and pat dry.
- Chop the leaves.
- Put the ingredients in a wide bowl and mix well.
- Knead it to a soft dough with little water.
- Keep it aside for ten minutes.
- Take a ball of the dough.
- Roll it into a circle of diameter 5 inch.
- Smear some oil and dab a little flour. Fold it like a pleat from one end to the other.
- Then, make it into a circular shape.
- Roll into a circle.
- Heat a skillet.
- Put the rolled paratha on to the skillet.
- Flip it to the other side, smear oil and back again to the original side.
- Let cook until brown spots are visible.
- Serve hot with pickle or curds.

A good idea to add chopped mint to a paratha dough. I sometimes have too much mint around that gets spoilt in no time. Next time before the mint goes bad will borrow your idea of making flavorful mint paratha.

Another great idea by you Jayashree. I never tried mint in my parathas. This one to try out, love the smell of mint in my cooking as well into my dishes, such a refreshing smell.
