The daily food seems to bad to indulge and calls for a change. Fried food seems to be tasty while eating and liked by all. I do not prepare often but children do love these !
Mangalore bonda are tasty and easy to make. They make a perfect evening snack with a cup of hot tea. The other name for it is Goli bajje or Maida bonda. Crisp on the outside and soft inside, they are surely a favourite of many. Serve hot with coconut chutney.
INGREDIENTS :
- Maida 2cups
- curds 1 cup
- ginger juveniled 1 inch
- green chillies 4
- salt
- curry leaves a few
- oil for frying
PROCEDURE :
- Sieve maida and keep it aside.
- Whisk the curds, add salt and mix well. Now ,add maida as much as it holds. The consistency should be quite thick. Here, the curds used should be sour. The more sour, the better the dish !
- Add bits of green chilly and ginger into it. Cut a few sprigs of curry leaves and pop it in. Mix the batter and keep it aside for five minutes.
- Heat oil in a kadai. Make small bondas and slowly drop them in the oil. Fry till golden colour. Serve hot.
Make a note :
Use sour curds. This is very essential. A pinch of soda may be added to the batter.
