Feeling awesome, I am on my way to healthy eating. Brown rice (hulled or unmilled ) is much used in my kitchen these days.The brown rice is the simplest and healthiest form of rice. Here only the outer layer is removed and thus all the nutrients are present. If the brown rice is milled and polished, the resultant is our white rice, which is less nutritious in the process and more starchy. Thus, brown rice is low in carbs, rich in fibre, has more nutrition and keeps one going for a longer time.
I have tried various recipes with brown rice and they were good. With the theme of our blog as biryani , I thought of giving a try with brown rice. It was tasty and liked by all.
Ingredients :
- brown rice 125gm
- beans finely cut 1 cup
- carrot finely cut 1 cup
- cauliflower florets 1 cup
- green peas 1 cup
- cinnamon 1 small stick
- cardamom 2
- cloves 3
- ginger grated 1/2 inch
- green chilli 2
- coriander 1 cup
- cumin 1/2 tsp
- onion 2 finely cut
- tomato 2 chopped
- coriander powder 1tsp
- red chilly powder 1to 2tsp
- garam masala 1/2 tsp
- curds 2tbsp
- salt to taste
- oil 2tbsp
Pre-requisites
- Wash and soak the brown rice in water for half and hour.
- Cut all the veggies into small pieces, put the florets in hot water for sometime.
- Grind coriander, green chilli, ginger and garlic to a paste with a little salt in it.
Method :
I am preparing by the direct cooking method. Put the soaked rice in a cooker with three times the water. Keep it on a low flame. Add cinnamon, cardamom and clove to it. Let cook. After sometime, put beans into it. Beans need a little longer time to cook. Five minutes later, put in the carrots. The cauliflower are the last ones, as they are partially cooked. Add salt and once it is done, switch off the gas.
Take a pan and add oil to it. Add cumin to it, as it splutters throw in the onions and saute for a while, add the paste and give a stir. Two minutes later, add the tomatoes, turmeric powder and salt. Cook till tender. Later, add coriander powder, garam masala powder and curds to it. Let cook for a while.
Take the cooked mixture and mix it with the cooked brown rice. Let the flavours blend together, so heat it for a while. Take care while doing this step. Brown rice biryani is ready to serve. Serve with cucumber or onion salad.

Jaya what a decadent and inviting Biryani you have put up. In a family of Biryani lovers like mine, it would be a wonderful idea to incorporate your Biryani and have Biryanis more frequently. Indeed brown rice is nutrition loaded and guilt free. Bookmarked this yummy Biryani. Yummmm.
