Nippatu or rice crackers as they may be called are popular snacks prepared during festivities. They can be stored for a long time and can be used with tea or as an evening snack. In Karnataka, nippattu is different from other states. Here is one such kind.Nippattu is a versatile snack. One can play around and make different snacks as chaats with it.

Ingredients:

  • 1 cup rice flour ( measurement: 1 cup =250 ml)
  • 1 tablespoon roasted groundnut
  • 1 tablespoon split dahlia (roasted gram)
  • 1 teaspoon cumin
  • 1 teaspoon sesame
  • 1 tablespoon desiccated coconut
  • 2 teaspoon chilly powder
  • 1/4 teaspoon asafoetida
  • salt to taste
  • a few curry leaves
  • 1 tablespoon oil (warm)
  • oil for frying
  • water for kneading

 

Method:

  1. Keep all ingredients ready.
  2. Discard the skin of the groundnut and coarsely grind it along with roasted gram and desiccated coconut.
  3. Put the rice flour in a wide bowl. Add all ingredients to it.
  4. Heat oil in a pan. Once it is heated, add one tablespoon of oil to this and mix all the ingredients well.
  5. Add a little water and knead to a dough of thick consistency.
  6. Take a small ball of the dough. On a thick sheet or parchment paper, make it into a small disc.
  7. Repeat it for a few more.
  8. Slowly put a few of them into the oil, leave it from the sides, taking care that they do not fold.
  9. Deep fry on medium flame to a golden colour.
  10. Remove on a plate with absorbent paper.
  11. Store in an air-tight container when cooled.

Nippattu rice crackers

Nippattu is a popular dry snack from the state of Karnataka. It is tasty and can be eaten anytime. 
Servings: 20 crackers
Course: Snack
Cuisine: Indian

Ingredients
  

  • 1 cup rice flour
  • 1 tablespoon roasted groundnut
  • 1 tablespoon split dahlia
  • 1 tbsp desiccated coconut
  • 2 teaspoon chilly powder
  • salt to taste
  • 1 tablespoon warm oil
  • oil for frying
  • water for kneading

Method
 

  1. Keep all the ingredients ready.
  2. Remove the skin of the groundnuts, coarsely grind it along with split dahlia and desiccated coconut. 
  3. Add all dry ingredients to the flour.
  4. Heat oil in a pan, once it is heated add one tablespoon oil to this.
  5. Mix well. Add little water and mix it to a stiff dough.
  6. Take a small ball of the dough. Grease a  thick plastic sheet with a little oil. Make it into a circular disc. 
  7. Repeat for a few more, you can fry six at a time (of course depending on the size of the pan)
  8. Slowly, let the discs into the oil. Deep fry on medium heat, after sometime, increase it for sometime and then reduce.  It should be golden in colour.
  9. Remove them on an absorbent paper. 
  10. After sometime, store them in a  container.

Notes

The crackers should be neither too thick or too thin. If they are thick, they tend to be soft while very thin ones become hard to eat.
